THE CULINARY BRIGADES

by la tablée des chefs

The Roquette Foundation for Health supports the association “La Tablée des Chefs” and its project LES BRIGADES CULINAIRES.

La Tablée des Chefs France, a not-for-profit association with a social focus (affiliate of La Tablée des Chefs in Canada), has a mission to educate young people in the basics of cooking and healthy eating, and to fight food insecurity. The association works along two main lines:

  • Educate: Cooking workshops in middle schools and youth homes to teach young people the fundamentals of healthy and sustainable eating, helping them gain independence in their food choices.

  • Nourish: Mobilizing hospitality school students and companies to prepare meals donated to food aid organizations.

THE CULINARY BRIGADES

The “LES BRIGADES CULINAIRES” project is aimed at young people aged 12 to 15, especially those from disadvantaged backgrounds or experiencing academic difficulties. Throughout the year, students from 40 middle schools, organized into brigades and supervised by a volunteer professional chef, take part in 10 cooking workshops. With their Student Workbook, endorsed by Professor Dechelotte, Head of the Nutrition Department at Rouen University Hospital, they discover theoretical teachings about nutrition, as well as healthy, balanced, easy-to-make, and affordable recipes, organized around key themes such as legumes or vegetables. Two challenges are also proposed to raise awareness among students about solidarity and the fight against food waste.

The program aims to teach young people basic cooking techniques, raise their awareness about healthy and sustainable eating, develop their autonomy, and, for some, inspire vocations in the culinary professions. The association also advocates for food aid and social inclusion.

At the end of the program, a national final brings together in Paris the eight best brigades selected by a jury. Since 2024, an international dimension has been added to the event with a meeting between France and Canada, where students from both countries compete for the title of “Best Brigade in the World.”
